The Recipe

Brie, Bacon & Spiced Cranberry Toasties
Serves: 2 | Cooking time:
  • 1 tbsp olive oil
  • 4 rashers of Cure & Simple bacon
  • 4 tbsp cranberry sauce
  • 1/2 orange, zested
  • Large pinch of mixed spice
  • 4 slices fresh white bread
  • 50g unsalted butter
  • 150g brie, sliced with rind removed
  1. Heat the olive oil in a frying pan over a moderate heat. Fry the bacon rashers for around 4 minutes, turning occasionally until they are cooked and the fat is crispy. Then leave to drain on a piece of kitchen towel
  2. While the bacon is cooking, combine the cranberry sauce with the orange zest and mixed spice, beating it so it is a nice spreadable consistency
  3. Butter one side of all the bread slices well and then place two slices butter-side down into the frying pan with the bacon fat on a medium heat. Leave for a couple of minutes, then spread the cranberry sauce across the bread slices. Place the sliced brie on top of the cranberry sauce, followed by the bacon and then top with the other bread slice butter-side up. Leave the toasties for a couple more minutes then flip them over and toast for a further 5 minutes until both sides are golden and the cheese has melted. Slice the toasties in half and serve straight away
