The Recipe

Lemon & Garlic Green Bean Salad with Crumbled Bacon & Walnuts
Serves: 4 | Cooking time: 20 minutes
  • 2 garlic cloves, peeled
  • zest of 1/2 lemon, plus 2 tbsp lemon juice
  • 4 tbsp extra virgin olive oil
  • 1 tsp dijon mustard
  • 50g walnuts, roughly chopped
  • 4 rashers Cure & Simple Original smoked streaky bacon, thinly sliced
  • small bunch of flatlet parsley, finely chopped
  1. Bring a large pan of salted water to a boil and add the whole peeled garlic cloves. Working in two batches, add the green beans to the water and blanche for 4 minutes until they are bright green and have softened slightly, drain and place into a large serving dish. Lift out the two garlic cloves and save them for your dressing
  2. Meanwhile, add the streaky bacon slices to a cold pan and place on a medium heat. Fry for 5 mins until crisp, then stir through the chopped walnuts. Set aside until you’re ready to serve
  3. To make the dressing, finely chop the boiled garlic cloves and add them to a small bowl. Add the lemon zest, lemon juice, olive oil and dijon mustard and whisk for a minute until it comes together, then season. Spoon a few tablespoons of the dressing over the green beans and toss to coat, then top with the bacon and walnuts. Serve immediately
